Ingredients

Scale

Pizza Dough

  • 1 package refrigerated pizza dough (or homemade pizza dough)

Filling

  • 1 1/2 cups marinara sauce or pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup pepperoni slices (or your choice of toppings such as sausage, mushrooms, bell peppers, olives)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)

Finishing

  • Olive oil for brushing (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s hot and ready for baking the pot pies perfectly.
  2. Prepare Ramekins: Lightly grease 4-6 small ramekins or oven-safe bowls depending on their size, to prevent sticking and make removal easier.
  3. Roll Dough: Roll out the pizza dough on a lightly floured surface to about 1/8 inch thickness for a thin, crispy crust.
  4. Cut Dough: Cut the dough into circles or squares large enough to line your ramekins, leaving about 1 inch of dough overlapping to fold over the filling.
  5. Form Crust: Gently press the dough into the bottom and sides of each ramekin to create a crust shell that will hold the filling.
  6. Add Sauce: Spoon approximately 2 tablespoons of marinara or pizza sauce into the bottom of each dough-lined ramekin to add a flavorful base.
  7. Layer Cheese: Sprinkle 2-3 tablespoons of shredded mozzarella cheese over the sauce to create a gooey middle layer.
  8. Add Toppings: Place a few slices of pepperoni or your preferred toppings evenly over the cheese layer for added flavor and texture.
  9. Season: Sprinkle grated Parmesan cheese, dried oregano, basil, garlic powder, and optional red pepper flakes over the filling to enhance the Italian taste.
  10. Top and Seal: Add more mozzarella cheese on top, then fold the overhanging dough over the filling, partially covering the top to encase the filling with some openness.
  11. Brush Dough: Brush the tops of the pot pies with olive oil for a beautiful golden brown finish after baking (optional but recommended).
  12. Bake: Place the ramekins on a baking sheet and bake in the preheated oven for 20-25 minutes until the dough is golden and the cheese is melted and bubbly.
  13. Cool and Serve: Allow the pot pies to cool for about 5 minutes before serving to set the filling and prevent burns. Serve hot with extra marinara sauce for dipping.

Notes

  • Feel free to customize toppings such as sausage, mushrooms, bell peppers, or olives in place of pepperoni.
  • Use homemade pizza dough for a fresher taste, or refrigerated dough for convenience.
  • Brush the crust with olive oil or an egg wash for an extra glossy, golden crust.
  • Make sure to let the pot pies cool slightly before eating to avoid hot filling burns.
  • These pot pies can be made ahead and refrigerated before baking, then baked fresh when needed.
