Ingredients

Scale

Potato Sticks

  • 3 large russet potatoes, peeled and cut into sticks

Coating

  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • ½ cup breadcrumbs (preferably panko for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Cheese Stuffing

  • 1 cup shredded mozzarella cheese

For Frying and Garnish

  • Vegetable oil for frying
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare the Potatoes: Place the peeled and cut potato sticks in a pot of water with a pinch of salt. Bring to a boil and cook for 5-7 minutes until slightly tender but still firm. Drain and let cool completely.
  2. Set Up Breading Station: Arrange three bowls with flour, beaten eggs, and a breadcrumb mixture combined with garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Coat the Potato Sticks: Dredge each potato stick first in flour, shake off excess, then dip in beaten eggs, followed by the seasoned breadcrumb mixture, pressing gently to adhere. Repeat until all are coated.
  4. Stuff with Cheese: Create a small slit along each coated potato stick and insert about 1 tablespoon of shredded mozzarella cheese. Seal edges gently to prevent cheese leakage during frying.
  5. Fry the Cheese Sticks: Heat about 2 inches of vegetable oil in a deep skillet over medium-high heat. When hot, fry potato cheese sticks in batches for 3-4 minutes per side until golden brown and crispy.
  6. Drain and Serve: Remove sticks from oil and drain on paper towels to remove excess oil.
  7. Serve Warm: Garnish with chopped parsley if desired and serve warm with your favorite dipping sauce such as ketchup, ranch, or garlic aioli.

Notes

  • Ensure potatoes are slightly tender but not fully cooked before frying to achieve a crispy exterior and soft interior.
  • Use panko breadcrumbs for an extra crunchy texture.
  • Seal the cheese inside properly to avoid cheese leakage while frying.
  • Maintain oil temperature for even frying and to prevent greasiness.
  • Serve immediately for best taste and texture.
