  • 1 cup confectioners sugar (sugar-free or regular)

  • 2 tablespoons milk or water (as needed)

Instructions

  1. Preheat the Oven: Preheat your oven to 170°C (325°F). Line a baking tray with parchment paper and set it aside to prepare for baking.
  2. Prepare the Dry Ingredients: In a medium mixing bowl, whisk together the whole wheat flour, vanilla protein powder, sugar, and baking powder until well combined.
  3. Mix the Wet Ingredients: In a separate smaller bowl, combine the applesauce, neutral oil, and vanilla extract. Stir until smooth and evenly mixed.
  4. Form the Dough: Add the wet ingredients to the dry ingredients and stir until a dough forms. If it feels dry, add 1-2 teaspoons of ice-cold water. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 15 minutes.
  5. Roll and Cut the Pastry: After chilling, divide the dough into two equal parts. Roll out one portion between two sheets of parchment paper to about 1/8 inch thickness. Cut into 8 equal rectangles using a pizza cutter. Repeat with the second dough portion.
  6. Fill the Pastry: Place the dough rectangles on the lined baking tray. Spoon a generous amount of strawberry jam into the center of each, leaving space around edges for sealing.
  7. Assemble and Seal: Place a second dough rectangle over each filled piece. Press the edges with your fingers, then crimp thoroughly with a fork to seal completely.
  8. Bake the Pop Tarts: Bake in the preheated oven for 10-15 minutes until the pastry is lightly golden brown. Remove and transfer to a wire rack to cool completely.
