Instructions

  1. Combine Ingredients. In a large bowl, thoroughly mix the shredded coconut, dulce de leche, sweetened condensed milk, and crushed Nilla Wafer cookies until well combined and uniform in texture.
  2. Shape Truffles. Line a baking sheet with parchment paper. Scoop about one tablespoon of the mixture and form into small balls or mounds, then place each onto the prepared baking sheet. Repeat until all mixture is used.
  3. Freeze Truffles. Place the baking sheet with the formed truffles into the freezer for approximately 30 minutes to firm up, which makes chocolate dipping easier.
  4. Melt Chocolate. Melt the Ghirardelli dark chocolate wafers according to package instructions—typically about 1½ minutes in the microwave, stirring every 30 seconds until smooth.
  5. Dip Truffles. Dip the bottom of each chilled truffle into the melted chocolate, then return to the parchment-lined baking sheet to set.
  6. Drizzle Chocolate. Pour the remaining melted chocolate into a small zip-top bag, snip off a small corner, and drizzle chocolate artistically over the dipped truffles.
