Instructions

  1. Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add beef chunks in batches, ensuring all sides are well-seared to develop flavor. Once browned, remove the beef and set aside.
  2. Sauté Onions and Garlic: In the same pot, add the peeled pearl onions and minced garlic. Cook for about 5 minutes until softened and fragrant, stirring occasionally to avoid burning.
  3. Deglaze with Red Wine: Pour in the red wine, scraping the bottom of the pot with a wooden spoon to lift all browned bits. Let the wine reduce for a few minutes, intensifying the flavor base.
