Scotcharoo Popcorn is a delightful treat combining the crunchy, light texture of popcorn with a rich, creamy coating of peanut butter, honey, and brown sugar, topped with a luscious drizzle of melted chocolate and butterscotch chips for an irresistible sweet and buttery flavor mix.

Ingredients

Scale

Popcorn Base

  • 8 cups popped popcorn, plain (about ⅓ cup kernels)

Peanut Butter Coating

  • 1 cup creamy peanut butter
  • ¾ cup honey
  • 1 cup brown sugar
  • ¼ teaspoon salt

Chocolate Drizzle

  • ¼ cup semi-sweet chocolate chips
  • ¼ cup butterscotch chips
  • 1 teaspoon coconut oil

Instructions

  1. Prepare the Popcorn: Put the popcorn in a large bowl and remove any unpopped kernels to avoid unwanted crunches and ensure safety.
  2. Make the Peanut Butter Mixture: In a medium saucepan over medium-low heat, melt together peanut butter, honey, brown sugar, and salt. Stir continuously until the mixture is smooth and well combined, careful not to overheat, which can cause the coating to harden prematurely.
  3. Coat the Popcorn: Pour the warm peanut butter mixture over the popcorn and gently fold using a spatula or wooden spoon to evenly coat all the popcorn pieces without crushing them.
  4. Spread the Popcorn: Transfer the coated popcorn onto a large baking sheet lined with parchment paper, spreading it in an even layer to cool and set.
  5. Melt the Chocolate and Butterscotch: In a small saucepan or microwave-safe bowl, gently melt together the semi-sweet chocolate chips, butterscotch chips, and coconut oil. Stir until smooth and glossy.
  6. Drizzle the Chocolate: Evenly drizzle the melted chocolate mixture over the coated popcorn on the baking sheet to add a decadent finishing touch.
  7. Cool and Set: Allow the popcorn to cool completely at room temperature or in the refrigerator until the chocolate is firm. Break into clusters and serve.

Notes

  • Ensure popcorn is plain and unsalted to balance the sweetness of the coating.
  • Use parchment paper when spreading the coated popcorn to prevent sticking.
  • Avoid overheating the peanut butter mixture to keep it pourable and easy to coat.
  • Store Scotcharoo Popcorn in an airtight container for up to 3-5 days to maintain freshness.
  • For a nut-free version, substitute peanut butter with sunflower seed butter and check the other ingredients for allergens.
