Instructions

  1. Prepare the Beef Balls: Divide the ground beef into four equal portions and roll each into a ball to ensure even cooking.
  2. Heat the Cooking Surface: Preheat a large cast iron skillet or flat top griddle over high heat until it is super hot and beginning to smoke.
  3. Cook and Smash the Burgers: Place the beef balls on the hot skillet and immediately season each with a generous pinch of kosher salt, fresh cracked pepper, and 1 teaspoon of Smashburger sauce. Add an equal amount of thinly sliced onions on top of each ball. Cover each patty with a sheet of wax or parchment paper to prevent sticking, then smash down firmly using a thin metal spatula and a heavy press or meat mallet to create thin, caramelizing burger patties.
  4. Flip and Add Cheese: When the patties are about 60% cooked and nicely caramelized on the bottom, carefully flip them, scraping up any browned bits. Immediately top each patty with two slices of American cheese and allow it to melt. Cook until the internal temperature reaches 165°F for safety.
  5. Prepare Toasted Bread: Reduce heat to low. Spread 1 tablespoon of Smashburger sauce evenly onto four slices of the hearty white bread. Melt half the butter on the clean side of the skillet, making sure it is free from burnt residue, then place the sauced slices butter-side down on the skillet.
