Nuts and Seeds

  • 1 teaspoon curry powder

Instructions

  1. Preheat oven and prepare baking sheet: Heat your oven to 325°F (163ºC) and coat a baking sheet with nonstick spray to prevent sticking during baking.
  2. Mix the spice coating: In a large bowl, whisk together the pure maple syrup, dried rosemary, curry powder, kosher salt, and cayenne pepper to create the flavorful glaze for the nuts.
  3. Coat the nuts: Add all the raw nuts and pumpkin seeds to the bowl with the spice mixture. Toss thoroughly to ensure every nut is evenly coated with the spiced maple glaze.
  4. Arrange on baking sheet: Transfer the coated nuts onto the prepared baking sheet, spreading them into a single, even layer to ensure even roasting.
  5. Optional seasoning: Lightly sprinkle flaky sea salt over the arranged nuts for added texture and burst of salty flavor.
  6. Bake the nuts: Place the baking sheet in the oven and bake for 20–25 minutes, stirring the nuts a couple of times during baking to toast them evenly and prevent burning. They should become golden brown and aromatic.
  7. Cool and store: Remove nuts from the oven and let them cool completely on the baking sheet. Once cooled, use a metal spatula to scrape them off the pan, then transfer to an airtight container. Store at room temperature for up to two weeks for maximum freshness.

  • If you’re sensitive to heat, substitute cayenne pepper with black pepper for a milder spice.
  • Raw, unsalted pumpkin seeds (pepitas) can be difficult to find; if unavailable, roasted unsalted pepitas can be used but will have a different texture and won’t burn as easily.
