Instructions

  1. Preheat the oven: Preheat your oven to 180°C (350°F) and lightly grease or line a square baking dish with parchment paper to prevent sticking.
  2. Sauté aromatics and spinach: Heat a tablespoon of olive oil in a skillet over medium heat and sauté the finely chopped onion and minced garlic until they become soft and fragrant. Add the fresh spinach and cook until wilted, or if using frozen spinach, cook until most of the moisture has evaporated. Remove from heat and allow the mixture to cool slightly.
  3. Prepare the batter: In a large mixing bowl, whisk together the eggs, milk, and olive oil until the mixture is smooth and combined. Stir in the flour, baking powder, salt, black pepper, and dried oregano or dill, mixing until you achieve a thick but pourable batter.
  4. Combine ingredients: Fold in the cooled spinach and onion mixture along with the crumbled feta cheese. If using, add the grated mozzarella or Parmesan cheese at this stage and gently mix to distribute evenly.
  5. Transfer and bake: Pour the batter evenly into the prepared baking dish and smooth the surface with a spatula. Place in the preheated oven and bake for 35 to 40 minutes or until the top is golden and the center is set.
