Base
- 8 oz cream cheese or coconut cream
- 4 oz yogurt or additional cream cheese or coconut cream
- 1 cup powdered sugar or sugar-free alternative
Fruit
- 5 medium size strawberries, stemmed
Optional Flavoring
- 1/4 tsp vanilla bean paste (optional)
- Prepare the base: If using cream cheese, allow it to come to room temperature for easier blending. If using coconut cream, open the can and ensure the contents are thick and creamy. Avoid cans with hard and flaky cream as they won’t blend well.
- Puree the strawberries: Remove the stems from the strawberries and mash or blend them until smooth, creating a fresh strawberry puree as the fruit base of the mousse.
- Combine ingredients: In a food processor, blender, or using a hand mixer, add the room temperature cream cheese or coconut cream, yogurt or additional base, powdered sugar or sugar-free substitute, and the strawberry puree. Include vanilla bean paste if using.
- Blend to smoothness: Blend all the ingredients until the mixture becomes completely smooth and well combined, creating a light mousse texture.
- Chill and serve: Transfer the mousse into serving dishes and refrigerate for several hours. The mousse will thicken considerably as it chills, developing its characteristic airy and creamy consistency.
Notes
- Use full-fat cream cheese or coconut cream for the best texture and flavor.
- For a vegan version, substitute cream cheese and yogurt with coconut cream and plant-based yogurt.
- Sugar-free alternatives work well to reduce sugar content without losing sweetness.
- Ensure the coconut cream is not separated or flaky; only use creamy coconut cream for mousse.
- Can be garnished with fresh strawberries or mint leaves for presentation.
