Ingredients

Scale

For the Apple Filling

  • 6 cups red apples (such as Gala, McIntosh, or Honeycrisp), cored and chopped into bite-sized pieces
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 cup brown sugar
  • 2 tablespoons all-purpose flour

For the Crust

  • 1 roll (16 ounces) premade sugar cookie dough (tubed)

Instructions

  1. Preheat the Oven: Set your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking.
  2. Prepare the Apples: Core and chop the apples into bite-sized pieces. Place them into a large mixing bowl.
  3. Mix the Filling: Add lemon juice, vanilla extract, nutmeg, cinnamon, brown sugar, and flour to the apples. Stir everything thoroughly to combine and evenly coat the apple pieces.
  4. Assemble the Filling: Grease a 9×13-inch baking dish. Pour the apple mixture into the dish, spreading it out evenly.
  5. Prepare the Cookie Topping: Open the premade sugar cookie dough and cut it into 18 slices.
  6. Top the Filling: Arrange the cookie dough slices evenly over the apple filling, covering the top.
  7. Bake the Cobbler: Place the dish into the preheated oven and bake for about 35-40 minutes, or until the sugar cookie topping is golden brown and cooked through, and the apple filling is bubbly.
  8. Cool and Serve: Let the cobbler cool for 10-15 minutes before serving. Serve warm, optionally with vanilla ice cream or whipped cream for extra indulgence.

Notes

  • Use any sweet-tart red apple variety to balance the flavors best.
  • Store leftovers covered in the refrigerator for up to 3 days.
  • Reheat gently in the microwave or oven before serving.
  • For a gluten-free version, use gluten-free flour and sugar cookie dough.
