Main Ingredients
- 4 cups sweet potatoes, 1/2-inch cubes
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup uncooked quinoa, rinsed
- 1 cup frozen corn, thawed
- 2 cups vegetable broth
Spices and Seasonings

- 2 tsp cumin

- 1/2 tsp dried thyme
- 1/2 cup green onions, chopped
- Preheat the Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
