Instructions

  1. Heat Olive Oil: In a medium-sized soup pan, heat 1 tablespoon of olive oil over medium heat until shimmering.
  2. Sauté Shallots: Add the chopped shallots to the pan and sauté until translucent and fragrant, about 3-4 minutes.
  3. Add Sweet Potatoes and Apples: Stir in the peeled and cubed sweet potatoes and chopped apples. Sprinkle a good pinch of kosher salt and sauté everything together for about 3 minutes to combine flavors.
  4. Add Broth and Simmer: Pour in just enough low sodium vegetable broth to cover the vegetables (about 3 ½ cups). Bring to a simmer and cook until the sweet potatoes and apples are soft and tender, approximately 15-20 minutes.
  5. Blend Soup: Use an immersion blender directly in the pot to blend the soup until smooth. Alternatively, let the soup cool slightly, then transfer it in batches to a blender and puree until smooth. If the soup is too thick, add a little more broth to achieve your desired consistency and stir well.
  6. Add Spices and Adjust Seasoning: Stir in ⅛ teaspoon fresh nutmeg and ¼ teaspoon cinnamon. Taste and adjust seasoning with kosher salt, freshly ground black pepper, and add a touch of maple syrup if you prefer a sweeter flavor profile.
  7. Serve and Store: Ladle the soup into bowls and serve warm. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
