Ingredients

Scale

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk
  • 1/2 cup ricotta cheese
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Prepare the Batter: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined. In a separate bowl, whisk together the buttermilk, ricotta cheese, eggs, melted butter, lemon juice, and lemon zest, making sure the ricotta is fully incorporated. Pour the wet ingredients into the dry ingredients and gently fold with a spatula just until combined; a few lumps are perfectly fine. Let the batter rest for 5-10 minutes to allow the ingredients to meld.
  2. Cook the Pancakes: Heat a lightly oiled griddle or large non-stick skillet over medium heat. Using a 1/4 cup measure, pour batter onto the hot surface, leaving space between pancakes. Cook each pancake for 2-3 minutes on one side until bubbles form and the edges look set. Flip carefully and cook another 2-3 minutes until golden brown and cooked through. Transfer cooked pancakes to a warm plate or keep them in a 200°F oven to stay warm.
  3. Serve: Serve the pancakes immediately while warm, topped with your favorite accompaniments such as fresh berries, maple syrup, powdered sugar, whipped cream, or nuts for added flavor and texture.

Notes

  • Don’t overmix the batter to keep the pancakes light and fluffy; a few lumps are ideal.
  • Use a hot griddle to ensure golden brown, perfectly cooked pancakes.
  • Wait until bubbles form on the batter surface before flipping to avoid uneven cooking.
  • Keep cooked pancakes warm in a low oven to prevent them from becoming cold and soggy.
  • Experiment with toppings like fresh berries, chocolate chips, nuts, or powdered sugar for different flavor experiences.
  • Use fresh lemon juice and zest for the brightest citrus flavor.
  • Adjust sugar quantity to your taste for sweeter or less sweet pancakes.
  • Adding a splash of vanilla extract enhances the overall flavor.
  • Grease your griddle lightly with butter or oil to prevent sticking and achieve even browning.
