  • 125ml Fortisip® Compact Protein (Mocha), chilled
  • 15ml espresso coffee, chilled

  • 1/2 cup thick Greek style yoghurt
  • 2 tablespoons mascarpone

Dry Ingredients

  • 3 lady finger biscuits
  • 1/4 teaspoon cocoa powder

Instructions

  1. Prepare Mocha Coffee Mixture: Mix together 125ml of chilled Fortisip® Compact Protein (Mocha) with 15ml of chilled espresso coffee until fully combined.
  2. Make Yoghurt Mascarpone Mixture: In a separate bowl, combine 1/2 cup thick Greek style yoghurt with 2 tablespoons mascarpone and 1 tablespoon of the mocha coffee mixture. Mix well and set aside in the fridge to chill.
  3. Layer Base Biscuits: Break 1 1/2 lady finger biscuits into large pieces and place them at the base of a serving glass to cover the bottom.
  4. Soak First Biscuit Layer: Pour over two-thirds of the mocha coffee mixture onto the biscuit layer and allow the biscuits to soak for 3-4 minutes until softened.
  5. Add Yoghurt Mascarpone Layer: Spoon two-thirds of the yoghurt mascarpone mixture evenly over the soaked biscuit layer.
  6. Prepare Second Biscuit Layer: Break the remaining 1 1/2 lady finger biscuits into large pieces and soak them in the remaining mocha coffee mixture for 2-3 minutes until softened.
  7. Layer Second Biscuit and Remaining Mixtures: Spoon the soaked biscuit pieces over the yoghurt mascarpone layer, pour any remaining mocha coffee mixture on top, then top with the remaining yoghurt mascarpone mixture.
  8. Finish with Cocoa: Dust the top layer generously with 1/4 teaspoon cocoa powder for garnish.
  9. Chill and Serve: Refrigerate the assembled dessert for 1 hour to thicken and meld the flavors. Serve chilled and enjoy.

Notes

  • Use chilled ingredients to ensure the dessert sets well and maintains its structure.
  • If espresso is not available, strongly brewed coffee can be used as a substitute.
  • For a lighter version, reduced-fat Greek yoghurt may be substituted.
  • Allowing the lady fingers to soak adequately prevents dryness and ensures a soft texture.
