  • 1/4 cup Brown Sugar
  • 1/4 cup Granulated Sugar
  • 2 tablespoons Corn Syrup
  • 1 tablespoon Water
  • 2 tablespoons Butter
  • 1/2 teaspoon Pure Vanilla Extract

Instructions

  1. Prepare Baking Sheet: Line a cookie sheet with parchment paper or a Silpat and set aside to ensure the coated walnuts won’t stick after cooking.
  2. Combine Ingredients: In a medium-small saucepan, attach a candy thermometer. Add the walnuts, brown sugar, granulated sugar, corn syrup, and water. Stir with an infolding motion carefully to avoid sugar crystallizing on the pan’s sides. Add butter once combined.
  3. Prevent Sugar Crystallization: If sugar crystals appear on the saucepan edges, use a wet pastry brush to dissolve them. Do not scrape sugar off the sides while stirring to prevent sugar from seizing.
  4. Cook to Temperature: Over medium heat, cook the mixture, stirring occasionally until it reaches 295°F (145°C) on the candy thermometer, being careful not to burn the sugar.
  5. Add Vanilla and Mix: Remove the pan from heat and stir in the vanilla extract quickly. If the butter separates, continue stirring until it recombines into the mixture.
  6. Spread and Cool: Immediately spread the hot coated walnuts on the prepared baking sheet. Use two forks to separate them so they don’t clump together. Allow to cool completely until the toffee hardens.

  • Corn syrup is added to prevent sugar crystallization and help achieve a smooth toffee coating.
  • Be careful not to burn the sugar, as the mixture cooks quickly once it nears the target temperature.
