Delightfully festive and vegan-friendly Pine Cone Truffles crafted from cookie crumbs, cocoa, and chocolate corn flakes. These easy-to-make no-bake treats are perfect for holiday celebrations, offering a crunchy, chocolaty exterior with a soft, rich center, beautifully decorated to resemble pine cones dusted with a snowy touch of icing sugar.

Ingredients

Scale

Truffle Base

  • 200 g cookies
  • 100 g butter, melted
  • 2 tbsp sugar
  • 2 tbsp cocoa powder (unsweetened)
  • 2 tbsp plant-based milk (e.g., almond, soy, oat)

Decoration

  • 100 g chocolate corn flakes
  • 50 g dark chocolate
  • Icing sugar for dusting

Instructions

  1. Prepare the Cookie Mixture: Grind the cookies into fine crumbs using a mixer or by crushing them with a rolling pin. In a large bowl, combine the cookie crumbs, unsweetened cocoa powder, and sugar thoroughly. Add the melted butter and the plant-based milk, then knead the mixture until it forms a pliable dough. Shape the dough into a ball, wrap it tightly with cling film, and chill it in the refrigerator for 30 minutes to firm up.
  2. Melt the Chocolate: While the dough is chilling, melt the dark chocolate using a bain-marie (double boiler) method. This ensures the chocolate melts evenly without burning and is ready for decorating the truffles.
  3. Shape and Decorate Truffles: Remove the dough from the refrigerator and divide it into six equal portions. Shape each portion into an oval cone mimicking a pine cone. Pour the chocolate corn flakes onto a plate. Dip each chocolate corn flake “scale” partially into the melted dark chocolate and carefully arrange them on the cone starting from the top, working your way down in circular rows to resemble the delicate scales of a pine cone.
  4. Chill to Set: Place the decorated pine cone truffles back into the refrigerator for another 30 minutes to allow the chocolate to harden and the truffles to set perfectly.
  5. Final Touch: Lightly dust the chilled pine cone truffles with icing sugar to create the effect of freshly fallen snow, adding a magical and festive finish to these delightful treats.

Notes

  • If you prefer a simpler version, shape the dough into balls and roll them in coconut flakes, lightly toasted chopped nuts, biscuit crumbs, waffle crumbs, or cocoa powder.
  • For an adult twist, add one tablespoon of your favorite aromatic alcohol like rum, cognac, or fortified wine into the dough before chilling.
  • Ensure to use plant-based milk and vegan butter or margarine to keep the recipe completely vegan.
  • Store truffles in the refrigerator and consume within 3-5 days for best freshness.
