Instructions

  1. Prepare the base: Line a medium-sized baking sheet with parchment paper. Peel and slice the bananas into ⅓-inch thick slices, ideally on a slight angle for better fit. Arrange the banana slices touching each other in a rectangular shape on the lined baking sheet to help hold the bark together once frozen.
  2. Spread the peanut butter: Evenly spread the peanut butter over the banana slices to cover them completely. If the peanut butter is too thick, warm it in the microwave for 10–15 seconds to make spreading easier. Use a rubber spatula for smooth coverage.
  3. Freeze initial layer: Place the baking sheet with banana and peanut butter in the freezer for 20 minutes to set the peanut butter layer firmly.
  4. Melt the chocolate: Add dark chocolate chips (and optional coconut oil) into a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the chocolate is mostly melted and smooth. Be careful not to burn it.
